How each one works.

Coffee's caffeine has to travel from your mouth to your stomach to your small intestine, where it's absorbed into the bloodstream and eventually metabolized by the liver. The route adds 30 to 45 minutes to onset and exposes the caffeine to first-pass metabolism, where the liver converts about 80% of it into paraxanthine (the metabolite that does most of the cognitive work).
